Q. you usually hear that pasta is a good thing to eat when your on a diet ... but is it true? what about the starches? dont they produce more and more fat??

A. I think it varies from person to person. I know when I want to lose weight fast the best thing for me to give up is fat. So I eat pasta, baked taters and such and it works for me. Of course I eat the pasta plain except for some garlic salt. Yum!

If I put leftover dried pasta into a ziplock bag will it stay fresh?
Q. I have one of those tupperware pasta holder things, but right now I have angel hair pasta in it (dried).I cooked Penne and put the leftover dried pasta from the Barilla box in a ziplock bag. I decided I wanted to make Mezzi Rigatoni pasta and now have the leftover dried pasta in another ziplock bag. Will the ziplock bags keep the pasta fresh? Or should I only put them in tupperware?

A. Yep, you'll be fine. I always store my "extras" in ziploc bags and seriously, it will keep in there for eternity pretty much. I have a ziploc bag of elbows that I opened up at least 6 months ago, but the bag ripped all to shreds, so I grabbed a gallon size zip bag and they've been perfect in there ever since. In my experience, it's best to take them out of the boxes and store the pasta in zip bags anyway because every so often I'll find a box of mac and cheese or something on the shelf that I don't realize how long it's been there and end up with a boiling pot of pasta and little teenie black bugs floating to the top of the water. I still haven't figured out what the heck they are, but I've heard that they are some kind of mite that… [cont.]

How do I store penna pasta to be used next day in a pasta sala?
Q. I am making a huge batch of pasta salad for a party and need to get a jump on it. I don't have room to store the finished bowl of pasta salad in my fridge, so I wanted to make the pasta ahead and assemble it tomorrow morning. What is the best way to keep the noodles from being to sticky? I will be adding the dressing and goodies tomorrow.

A. cook your pasta and then refresh in some cold water, drain off the water then toss it in some olive oil or any other cooking oil. It'll be still perfect for the next day and oil will keep it all free flowing.

Would one box of pasta be enough for 5 adults to make pasta salad?
Q. I bought one box of rotini pasta for pasta salad. Should I make 2 boxes? And Can I boil one box now and make it and then add the other box later!!( I can't go to store till later to buy another box) And I wanted to make it now. THANKS! It's for picnic tomorrow! Having hot dogs, and Hamburgers too!
Asked by momof twins2008 - Sat Sep 5 14:40:09 2009 - - 5 Answers - 0 Comments
A. Yes, you can always add more noodles, but you do need to add more of the sauce/dressing so it isn't dry. If you have regular rotini, that box makes eight cups of cooked pasta. So you have 5 people with 8 cups of pasta, how much do you want people to have, the serving size is 1 1/2 cups of pasta, which is very filling. Add crackers or toasted french bread or any dry bread product to also help with filling up guest.

How can I keep pasta hot for a crowd if pepared in advance?
Q. I am having a pasta feed for my daughter's soccer team. I will keep the sauce hot in a crock pot. I want to cook the pasta in advance, but have it hot when the team arrives after practice. I will be using angel hair pasta.Any advice? I only have 2 large pots to cook in and need to cook for 18-20 teens--are two dutch oven type pots big enough? That's why I wanted to cook in advance.
Asked by Elizabeth K - Wed Feb 7 12:58:20 2007 - - 7 Answers - 0 Comments
A. It's a bad idea to pre-cook pasta. If they are coming to you house I would either cook it on the spot angel hair doesn't take long at all. You could undercook it a few mintues and leave it in a colander and rinse with hot water. This will remove the starch and the sauce mostly likely won't stick to the noodles. If the sauce is piping hot from the crock pot I would think it would warm up the noodles without have to heat them.

How long does pasta last for in the refrigerator?
Q. I ordered in already cooked pasta last Wednesday with tomato sauce, sundried tomatoes, and chicken. Since I couldn't finish it, I put it in my refrigerator. The pasta has a cover over it. Is it safe to eat 5 days later?

A. After a couple of days throw it away. Some experts say, after about 3 days, leftovers should be tossed. Pasta takes a different form after it's refrigerated. Personally I would throw it away.

What is the best way to microwave pasta several days after cooking?
Q. I am a huge pasta eater, and often cook huge portions of ziti or penne at a time. After eating my fill for dinner that night, I put the pasta in a covered bowl and refrigerate. However, after a night in the refrigerator, the pasta becomes hard and brittle, so when I want to warm it up and eat it days later, it is very stiff. Is there a special but simple way to cook it instead to get all the pasta at the same level of softness it is right after it is cooked for the first time.
Asked by someone - Mon Jan 18 14:49:53 2010 - - 3 Answers - 0 Comments
A. You should save a little of the pasta water and put it in the bottom of the bowl you use to store it. Make sure the top is on tight too. Use the smallest bowl to fit your pasta. These should keep your pasta from drying out. When reheating it, don't do it at full power. Make sure you have the pasta covered when reheating also. It won't be the same as fresh cooked, but should be fine.

Ziti pasta - what shape is it and is there a substitute?
Q. I have a recipe that calls for ziti pasta and I can't find it. Is there any acceptable substitute? What size and shape is it? Is it like lasagna noodles or more like a curly noodle? Thanks!
Asked by Susan B - Thu May 31 01:44:06 2007 - - 4 Answers - 0 Comments
A. Ziti are about 2 inches long and are hollow, you can almost fit a pencil inside. They are also cut straight or perpendicular to the pasta, imagine a small hose cut every two inches. Penne are very similar but are cut on the diagonal or bias, they have also grown in popularity, over the past few years.

What flour is good for making pasta by my self?
Q. I bought a pasta machine. So I can make pasta by myself. However, I don't know what flour should I use. Also, There are not many shops selling many kinds of flours. If you know good flour to make pasta, please tell me!!!

A. First choice is semolina. You may have to go to a 'health food' store to get it. High gluten bread flour is second. Semolina is a hard wheat with naturallly very high gluten content. High Gluten bread flour has to be worked (i.e., kneaded) a whole lot more in order to develop the gluten. All purpose flour will sort of work, but I wouldn't recommend using it in the pasta machine. In order for the pasta made from all-purpose to stay together, it needs to be thicker than most pasta machines will make. And the texture will be definitely softer. I know people who do it regularly, however, rolling it out like making a pie crust, cutting in into extra wide noodles, drying on a cooling rack and using it in home made soups. It tastes… [cont.]

Linguine with Fresh Tomato Sauce 2 cups seeded, and coarsely chopped tomato 1/2 cup extra virgin olive oil 1 cup firmly packed fresh basil leaves, minced 1 cup firmly packed fresh parsley leaves, minced 3 tablespoons freshly grated Parmesan 3 garlic cloves, or to taste, minced 2 teaspoons salt 1 pound linguine Fresh parsley to garnish Make tomato sauce: In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour. What shaped pasta do you think both young kids and adults would like in their macaroni and cheese?
Q. I'm making homemade macaroni and cheese for Thanksgiving since we have a lot of picky little kids in our family. I was wondering what shape of pasta would be best. I'd like to stray away from the all too common elbows, and try something a little bit more fun! It's meant for both kids and adults, so I'd like it to be a shape that is both appealing to the eyes of adults and children. What do you think?

A. i love pasta too, i eat it all the time =) try mixing it up, maybe have ravioli one day, fettucine the next, etc. i think one serving a day is fine as long as it's not too big and you get plenty of fruits and vegetables (and dairy if you eat it) to balance it out.

Does anyone have a recipe for a beef pasta skillet that does not require the pasta to be cooked first?
Q. I like to make a dish with a can of tomatoes, beef, onions and cooked pasta added at the end. How can I make it so the pasta cooks in the same pan as the beef while it simmers?
