Q. Right now I'm making a cannoli fillin, except I don't have ricotta cheese. What is the best substitute? Thanks! When I finish (or if I finish) I hope it tastes good!

A. Cottage cheese is a good substitute in savory dishes like lasagna or stuffed pasta. I think you will be really disappointed if you use it in sweet cannoli filling. It's salty and the texture is a little too wet. I think you really need ricotta for cannoli.

Im not suppose to eat burgers from Burger King or McDonalds but once a month I sneak over to Burger King and get a whopper--no cheese. A. Why substitute the feta? With the other ingredients you have listed it sounds like it is supposed to be in there. The feta is where the flavor and the salt and umami flavors are. I wouldn't replace it with anything ... or leave it out

A. I have used Cottage Cheese before but to get it to hold together add an extra egg. Also, try to strain the whey(liquid) from it as best you can. This helps to keep it from being as runny. I have also mixed it with equal parts of ricotta. And other times have put it in the blender to get it to a more cremier texture. That works too but still drain the liquid. You can use a paper towel in the bottom of the sieve, and let it set for about an hour, dump it into a work bowl and scrape off the paper towel. Then add the mozzerella, parmesan, parsley, garlic, oregano, basil, eggs and mix it up. Delicious...

What is a substitute for Monterey Jack Cheese available in Australia?
Q. I have a few recipes that call for Monterey Jack Cheese which is not available where I live,as far as I know - in Melbourne Australia. Can anybody recommend a good substitute for this cheese. I tried a cheddar from the deli in a dip recipe but it didn't work as well as it should have, going hard and seperating from the other ingredients. What is the best cheese substitute for Vegans?

Redwoods make a melting vegan cheese - doesn't quite melt the way dairy cheese does - feel like taking a blow torch to it some times, but lacking a blow torch I turn the grill up high - there's a technique to it but it tastes lovely when you master it! They also have some delicious non-melting vegan cheeses. Another good variety is Scheese. This does not melt from my experience (but maybe I just haven't mastered the technique!), but it does taste more realsitic than many I have come across. Tofutti do a range of vegan cheese slices - these are heavenly when melted (I prefer them that way) - it softens and even bubbles away like normal cheese would at a high temperature. Don't just put it on and expect to melt though unless your food… [cont.]

A. It really depends on the recipe. If it's a salad, you can usually substitute feta or goat's cheese. for a cooked recipe, again it depends. Blue cheese has a very distinct flavor. Most cheeses that approximate it are also mold cheeses. However, many other flavors can be substituted. They will change the character of the dish, but that's not always a bad thing. Brie, for example, has the same melting characteristics.

A. No. Farmer's cheese is a delicate, white shred-able cheese, much like the type provolone is. Cottage and ricotta are no where near what you want. I don't know what a pandebono is, but if you need a melt-able delicate cheese, try provolone, munster or maybe some American. Jack cheese perhaps? Better than American, for sure.

A. No it won't work to use cream cheese. But you CAN substitute butter with apple sauce. Or you can use pureed prunes, banana, pineapple, pumpkin, pears...fruit purees work.

A. Roquefort less costly? Roquefort is now about $30 per lb. and one of the most expensive because of the duties applied to this cheese. also Roquefort is made from sheep's milk, Gorgonzola is cow. The least costly substitute is Danish Blue. Go with that one. It's the best substitute and also the "best buy" out of all the substitutes mentioned. Stilton, Maytag, Roquefort are all very expensive. Not needed for a sub. Danish Blue is easily available and the best bang for the buck.

A. In most of the recipes I have seen, tiramisu calls for mascarpone. You could try that. It has a much milder flavor than cream cheese, and it is very very creamy. You can usually find it with the special cheeses at most supermarkets. I usually get mine at Meijer or Kroger.

A. tofutti makes a really great cream cheese and they make processed cheese slices. the slices dont really melt (they turn kind of oily) but theyre great for cold sandwiches or if you only toast it for two minutes or so. other than those i havent been very impressed by the other cheese substitutes ive found, though they are all worth a try as peoples tastes differ. kroger has tofutti products (usually in the organic cooler area, near produce) and whole foods has everything under the sun. hope you find something you like!
