What can I use to substitute garlic cheese?
Q. I am trying to make mock oyster dip. It calls for a roll of garlic cheese. I live in San Diego county, however NONE of the stores carry Kraft garlic cheese. Does anyone have any substitute ideas?

A. I have used Cottage Cheese before but to get it to hold together add an extra egg. Also, try to strain the whey(liquid) from it as best you can. This helps to keep it from being as runny. I have also mixed it with equal parts of ricotta. And other times have put it in the blender to get it to a more cremier texture. That works too but still drain the liquid. You can use a paper towel in the bottom of the sieve, and let it set for about an hour, dump it into a work bowl and scrape off the paper towel. Then add the mozzerella, parmesan, parsley, garlic, oregano, basil, eggs and mix it up. Delicious...

Redwoods make a melting vegan cheese - doesn't quite melt the way dairy cheese does - feel like taking a blow torch to it some times, but lacking a blow torch I turn the grill up high - there's a technique to it but it tastes lovely when you master it! They also have some delicious non-melting vegan cheeses. Another good variety is Scheese. This does not melt from my experience (but maybe I just haven't mastered the technique!), but it does taste more realsitic than many I have come across. Tofutti do a range of vegan cheese slices - these are heavenly when melted (I prefer them that way) - it softens and even bubbles away like normal cheese would at a high temperature. Don't just put it on and expect to melt though unless your food… [cont.]

A. Comte and Beaufort cheeses are Gruyere under a different name (they are French as opposed to Swiss). You could also substitute Swiss, Emmentaler, or Jarlsberg cheese. I recommend Jarlsberg or Emmentaler over "Swiss".

A. I'd suggest just leaving it out. The recipe will be nice with just the fish and veggies. There really is no "substitute" for feta.. and anything I might suggest would probably be just as hard to find if you can't get feta in your area.

A. No it won't work to use cream cheese. But you CAN substitute butter with apple sauce. Or you can use pureed prunes, banana, pineapple, pumpkin, pears...fruit purees work.

A. Roquefort less costly? Roquefort is now about $30 per lb. and one of the most expensive because of the duties applied to this cheese. also Roquefort is made from sheep's milk, Gorgonzola is cow. The least costly substitute is Danish Blue. Go with that one. It's the best substitute and also the "best buy" out of all the substitutes mentioned. Stilton, Maytag, Roquefort are all very expensive. Not needed for a sub. Danish Blue is easily available and the best bang for the buck.

A. It won't work. Just put as much parm as you have in and skip the rest. You will at least have a very flavorful cream sauce that will be good. Mozzarella will not melt properly in your sauce. It won't work because mozzarella does not have the same melting characteristics as parm. --edit-- If you found a recipe then go ahead and try it. Good luck with it, I hope it works for you.
