Can I use sour cream as a substitute for cottage cheese?
Q. I am baking lasagna, the problem is we do not have ricotta cheese, and the substitute is cottage cheese, which i don't like.

A. I have used Cottage Cheese before but to get it to hold together add an extra egg. Also, try to strain the whey(liquid) from it as best you can. This helps to keep it from being as runny. I have also mixed it with equal parts of ricotta. And other times have put it in the blender to get it to a more cremier texture. That works too but still drain the liquid. You can use a paper towel in the bottom of the sieve, and let it set for about an hour, dump it into a work bowl and scrape off the paper towel. Then add the mozzerella, parmesan, parsley, garlic, oregano, basil, eggs and mix it up. Delicious...

Q. Like the question says, I hate creamy white foods. Seriously, the only ones I'll eat are garlic Alfredo sauce, fat-free ranch dressing, and whipped cream. Maybe it's Freudian, I don't know. :) But lots of recipes I want to make call for mayonnaise, ricotta cheese, cottage cheese, cream cheese, or sour cream. What can I substitute for these items? Please no Miracle Whip, plain yogurt, etc, because I won't touch the stuff. Oh, and I don't eat eggs either, but milk is okay. Thanks!

A. how about a bechamel sauce?? also known as a 'white sauce' if you like alfredo, you should like this sauce! simple and delicious! basically you mix up some butter and flour over a medium heat until it is bubbly and gets golden, then put in milk...thn turn down the heat nd add bay leaf and salt/ppper to taste and simmer low/slow for about 20 min. it is good with anything that calls for a creamy white sauce. My grandma maked a baked macaroni and cheese, by boiling noodles, adding white sauce and plenty of cheese, then bake for 40 minutes until cheese is bubbly. hee is a link to a white sauce recipe: good luck!

A. The only way you'd get it out would be to spoon it out, and that would be just messy. The idea of a rim pan, is so that you can take the rim OFF in order to serve it. Better than the bundt pan is to use a formed aluminum foil pan, and once the cheesecake is cooked, cut the side of the pan around the rim with scissors, and peel it down to serve the cheesecake.

Q. Can I susbstitute bundt pan for rim pan when making cheesecake? Recipe has cottage,cream cheese, and sour cream, butter,flour ,Eggs etc. with no crust?Or maybe a pyrex dish?

A. The only way you'd get it out would be to spoon it out, and that would be just messy. The idea of a rim pan, is so that you can take the rim OFF in order to serve it. Can I substiture sour cream for cottage cheese?
