What is a good substitute for Ricotta Cheese in Germany?
Q. I cant find Ricotta Cheese here in Germany, and I want to make Lasagna. Can I just use Quark, or Quark mixed with a little Creme Fresch?

A. yes, you can use Quark as it is, you don't have to add the creme, or use another type of goat cheese. The lasagna will be fine. Good luck!

A. Yes you can. Run it through the food processor to break up the lumps and get a creamier texture. There are other alternatives, though. For a spinach-based cannelloni filling I have substituted ricotta with a mixture of grated mozzarella, grated parmesan and heavy cream--just mixed in a bowl with a fork, not even blended--and had a wonderful and flavorful result. The other ingredients were chopped cooked spinach, one or two eggs, a little garlic powder, basil, salt and pepper. Really a nicely flavored, rich filling. I've used it in lasagne as well, layered alternately with tomato sauce between the pasta layers.

A. Yes, but be sure to add eggs to the filling and parmasan cheese. The eggs will serve as a binder so the cream cheese doesn't melt and spill out of the shells, and the parmasan will cover up the flavor more of the cream cheese, which has a stronger flavor than ricotta, and also, with parmasan, it will give that real Italian flavor to the dish. You can also sprinkly mozzarella on top of it all and that too will make it taste more like the original version.

How to substitute vegetable juice cocktail and ricotta cheese on South Beach Diet?
Q. I really want to follow the South Beach Diet. It looks simple enough, and most of the foods are easy for me to eat because I already do on a consistent basis. My only drawbacks are two 'required' foods on phase one of the diet: vegetable juice cocktail (V8) and ricotta cheese (used nightly as a park of the dessert). What foods could I use to substitute for these two? Is V8 really anything more than a concentrated mix of vegetables? And I really can't stand the texture of ricotta cheese. A. I don't really think that you could substitute these ingredients because they have very different textures to cream cheese. I would just whip up your cream with a bit of castor sugar and top your cake with that.

I have an appetizer recipe that calls for Ricotta Salata, however, I'm having a hard time finding it in my neighborhood (the recipe is for mesclun and ricotta salata on grilled garlic toasts, found on epicurious.com) I have one or more places I can still check for it, but just to be on the safe side, I'm trying to find an adequete substitute. Any suggestions? And for those not familiar with ricotta salata, it is NOT the soft ricotta cheese you find in lasagna, but dryer in texture and saltier in taste... it is very yummy! Almost similar to a feta texture... but not quite. Any help is much appreciated! Thanks!
