Can I substitute ricotta cheese instead of cream cheese in making wontons?
Q. These are vegetarian wontons, with carrot, cabbage, mung bean sprouts, ginger, and soy sauce. I have ricotta and would like to use it rather than go buy more cheese.

A. Cottage cheese is a good substitute in savory dishes like lasagna or stuffed pasta. I think you will be really disappointed if you use it in sweet cannoli filling. It's salty and the texture is a little too wet. I think you really need ricotta for cannoli.

A. Yes you can. Run it through the food processor to break up the lumps and get a creamier texture. There are other alternatives, though. For a spinach-based cannelloni filling I have substituted ricotta with a mixture of grated mozzarella, grated parmesan and heavy cream--just mixed in a bowl with a fork, not even blended--and had a wonderful and flavorful result. The other ingredients were chopped cooked spinach, one or two eggs, a little garlic powder, basil, salt and pepper. Really a nicely flavored, rich filling. I've used it in lasagne as well, layered alternately with tomato sauce between the pasta layers.

I have also mixed it with equal parts of ricotta. And other times have put it in the blender to get it to a more cremier texture. That works too but still drain the liquid. You can use a paper towel in the bottom of the sieve, and let it set for about an hour, dump it into a work bowl and scrape off the paper towel. Then add the mozzerella, parmesan, parsley, garlic, oregano, basil, eggs and mix it up. Delicious...

How to substitute vegetable juice cocktail and ricotta cheese on South Beach Diet?
Q. I really want to follow the South Beach Diet. It looks simple enough, and most of the foods are easy for me to eat because I already do on a consistent basis. I have an appetizer recipe that calls for Ricotta Salata, however, I'm having a hard time finding it in my neighborhood (the recipe is for mesclun and ricotta salata on grilled garlic toasts, found on epicurious.com) I have one or more places I can still check for it, but just to be on the safe side, I'm trying to find an adequete substitute. Any suggestions? And for those not familiar with ricotta salata, it is NOT the soft ricotta cheese you find in lasagna, but dryer in texture and saltier in taste... it is very yummy! Almost similar to a feta texture... but not quite. Any help is much appreciated! Thanks!

A. if you don't have ricotta in a pinch you and strain cottage cheese in a cheese cloth to get out the majority of the moisture and us it. if you're going to be baking the recipe like in manacotti or lasagna it helps if you mix one egg and some italian seasoning in with it to give it some flavor and hide the cottage cheese taste

A. if you don't have ricotta in a pinch you and strain cottage cheese in a cheese cloth to get out the majority of the moisture and us it. if you're going to be baking the recipe like in manacotti or lasagna it helps if you mix one egg and some italian seasoning in with it to give it some flavor and hide the cottage cheese taste

Ricotta a sub for sour cream?
Q. I hate sour cream, cottage cheese and cream cheese. I'm making a lasanga casserole in like 30 minutes and was wondering if I can substitute ricotta for sour cream? I think it would taste delicious, especially in lasanga. If I can sub it, I imagine I use less ricotta since it is thicker than sour cream, correct? Please help!!! I'm about to start it soon! It wasn't a real lasagna but a casserole.
